Martin Gouthro, 22, from Cape Breton, Nova Scotia spent three seasons at the Keltic Lodge Spa and Resort in Ingonish, nestled in the beautiful Cape Breton Highlands National Park. During this period, Martin honed his skills in two areas of the food service industry. Starting in the kitchen as a pot washer, he learned that hard work and determination pays off. Then in the dining room as a bus person and a food runner, he learned that timing is crucial. The following two seasons, when he returned as an aspiring pastry chef, he learned the joy of creating and manipulating edible art and began seeking out books that would provide an inspiration for the creation of that perfect dessert. His dream is to create the next great dessert - something that will bring joy to the masses and to the highly respected mentors that trained him so well. Martin is one of the two students who won The Culinary Institute of Canada the right to represent Canada at the Olympics in 2008, and feels truly honored to be part of Culinary Youth Team Canada.
