Seth Shaw, 21, was raised in Lincoln, Maine, and spent his summers in Murray Corner, New Brunswick. His interest in culinary arts was sparked by helping his grandfather prepare chowder for competitions in Boothbay, about 80 miles away from their hometown. While still in high school, Seth embarked on a culinary course at the local vocational school. There, Chef Doris Shorey’s encouragement and expertise deepened his growing passion for cooking. For three years, Seth worked at a small restaurant called River Drivers under the supervision on Chefs Herman Armorman and Jesse Dumais. His time there served to convince him that cooking truly was his calling. After graduating from high school, Seth researched his options, and decided to come to Prince Edward Island to train at The Culinary Institute of Canada and is a proud graduate of the two-year Culinary Arts program. In his spare time, Seth enjoys skateboarding, snowboarding and other hands-on activities, but his real passion will always be food.
